This is my amazing breakfast from the other morning. I had a surplus of avos and mushrooms- my very favourite ingredients.

All you need to do is pan fry the mushrooms in a little soya sauce and sprinkle some black pepper on top.

On the toast goes mayonnaise, then avo, then fried mushrooms and finally grated cheddar. This really is a taste explosion- and started my day off with a bang 🙂 Sometimes that extra minute can really make a difference between toast and jam and this magical avo toast.
Thought I’d just share some carb love with this current carb hating society! 🙂
